If you want to properly prepare cottage cheese cake with apples, then the following recipe will help you.

Take the ingredients:

400 grams of flour,

a pack of low-fat, preferably crumbly cottage cheese,

150 grams of milk or cream,

300 grams of sugar,

100 grams of butter,

1 tablespoon lemon juice,

10 grams of baking powder, a pinch of soda and salt,

1 tablespoon vanilla sugar,

How to make a cupcake with apples from cottage cheese using all this? First, you should beat a pack of cottage cheese with sugar and butter. If you don't have a mixer at home, you can use a regular fork. The main thing is to make sure that you have a homogeneous creamy mass without lumps. After this, pour lemon juice into the mixture and mix everything thoroughly again.

The next step is to mix vanilla sugar, milk and eggs together. Eggs should be added one at a time, whisking them constantly. Add baking powder, sifted flour and salt to a plate with the curd mixture. Mix well.

Wash and peel the apples (they can be any kind, but sweet ones are best) and cut into small pieces. Add the chopped fruit to the dough, stir and place in the mold. Don't forget to grease the pan (or baking sheet) with vegetable oil first. Preheat the oven to 180 degrees and place the mold there. Bake the curd cake with apples for about 1 hour. You can check when the treat is ready using a match or fork. Once ready, the dish should be allowed to cool slightly before removing it from the oven.

For this recipe, you need to use thicker cottage cheese, at least 9%. Cottage cheese made from whole homemade milk is ideal. You can also use granular cottage cheese, but you must first rub it through a fine strainer. If you don't have small pans, bake the dough in one large pan. In this case, the baking time must be increased.

    Step 1: Mix and beat butter and sugar

    The butter for this recipe must first be removed from the refrigerator so that it melts and becomes soft. As a last resort, you can warm it up a little in the microwave at minimum power. Make sure that the butter does not melt completely, but only softens a little. In a deep bowl or bowl, mix softened butter and granulated sugar.

    Using a mixer, beat the mixture as required by the recipe. There is no need to beat the mixture for too long; one minute will be enough for the ingredients to mix.

    Step 2: Add cottage cheese and eggs to the whipped mixture

    Add two chicken eggs to the resulting mass. It is advisable for chicken eggs to be at room temperature. Therefore, it is better to take them out of the refrigerator in advance or put them in a bowl with warm, but not hot, water for 5-10 minutes so that they warm up a little.

    Now, according to the recipe, add fat cottage cheese to the mixture of butter, sugar and eggs. The fattier the cottage cheese, the tastier the cottage cheese muffins will be, so don’t be lazy to find a fattier product.

    Step 3: Add baking powder

    To ensure that our muffins with cottage cheese rise well and increase in volume during baking, add a little baking powder to the dough, as indicated in the recipe. To make the dough without lumps, sift the baking powder through a sieve.

    Step 4: Add sifted wheat flour

    Following the baking powder, add wheat flour into the dough. We will also first sift it through a sieve with fine holes. Thanks to this, the dough will be saturated with oxygen and will turn out homogeneous and airy. For this recipe, wheat flour can be added in one step.

    If desired, at this stage of preparing cottage cheese cupcakes, you can add a pinch of vanillin or a couple of drops of vanilla extract to the dough. Vanilla will make cottage cheese muffins even more flavorful. For the same purpose, you can add lemon or orange zest and a pinch of ground cinnamon to the dough.

    Step 5: Beat the dough until smooth

    Now thoroughly mix all the ingredients for the muffins with cottage cheese using a silicone spatula. When the flour combines with the liquid ingredients and the dough becomes homogeneous, beat it a little with a mixer so that it becomes airier and more tender. Please note that the dough for this recipe should be quite thick and flexible.

    Step 6: Prepare molds for baking cottage cheese muffins

    To bake the curd cupcakes, I used small silicone molds. They are very easy to use. These molds do not need to be pre-greased with butter; they are easy to wash and store, as they do not take up much space. In addition, baked goods burn and are easily separated from silicone molds. If desired, you can insert paper baskets into them to make the muffins convenient to take with you. If you do not use silicone molds, but ceramic or metal ones, be sure to grease them with butter so that the baked goods do not burn and easily separate from the mold.

    Step 7: Pour the dough into silicone molds

    Using a tablespoon, distribute the dough into the molds, filling them two-thirds full. There is no need to fill them completely, as the dough will rise while baking in the oven. From the amount of ingredients indicated in the recipe, I got 12 delicious cottage cheese muffins.

    Step 8: Bake cottage cheese cupcakes in the oven

    Place our muffins in a preheated oven for 30-40 minutes. Cooking time directly depends on the features of your oven. The oven temperature should be 180 degrees, as required by the recipe. The finished muffins should be golden on top and completely baked inside. The readiness of the products must be checked with a toothpick or wooden skewer. Stick it into the center of the cupcake. If the toothpick comes out completely dry and there are no traces of raw dough on it, then the cupcakes can be removed from the oven.

    Carefully remove the finished cakes from the molds and cool completely at room temperature, placing the cupcakes on a wire rack.

    Step 9: Submission

    Sprinkle the cooled baked goods with powdered sugar using a fine-hole strainer. If desired, the muffins can be topped with butter or marshmallow cream, chocolate melted with butter or sugar icing. Today we will prepare super healthy, delicious muffins with vitamin mixture, or rather, with dried apricots and raisins. Adjust the amount of raisins and dried apricots yourself, based on your taste. I add half a glass of raisins and the same amount of chopped dried apricots.

Instead of flour in this recipe I use semolina, with it the muffins come out with a more delicate, slightly loose texture.

To make our muffins I use low-fat cottage cheese to reduce calories. And it turns out very tasty. But you can also use fatty cottage cheese. If you have no choice, take the one you have on hand. The eggs for the dough must be fresh. We will only use yolks. We also need dried apricots and raisins.

Don't buy smooth raisins with an attractive golden color, they are most likely treated with sulfur.

Light raisins, when dried naturally, should turn brown or light brown, while dark raisins should turn blue-black. It should be wrinkled and have a matte finish. “Proper dried apricots,” which have not been chemically processed, should also not be radiant orange. Choose dried apricots dark orange or Brown with a grayish tint. It should also be wrinkled, somewhat stiff, and not soft or sticky to the touch. Make sure all foods are at room temperature.

Step-by-step recipe for cottage cheese muffins with raisins and dried apricots with photos

  1. Rinse raisins and dried apricots thoroughly with hot water. Let's soak and leave while we prepare the dough.
  2. And turn on the oven to warm up to 180°C.
  3. Place the cottage cheese in a bowl and mash it with a spoon or fork to get rid of any lumps.
  4. Now we need to carefully separate the yolks from the whites. Will be needed only yolks. Break the egg in the middle with a knife, pour the whites into a separate bowl (we won't need them), and put the yolks in a bowl.
  5. Add sugar to the bowl with the yolks and beat until you get a fluffy mass. We work with a whisk or blender, whichever is more convenient for you.

  6. Now take another dish (bowl) and combine semolina with baking powder.
  7. We drain the water in the container where we soak the raisins and dried apricots. Pat wet dried berries and fruits with a paper towel. Finely chop the dried apricots with a knife.

  8. At the final stage of preparing the dough, you need to combine all the prepared ingredients: mashed cottage cheese, yolks beaten with sugar, semolina with baking powder, dried apricots, raisins and vanilla sugar – and mix everything well.
  9. If you have silicone molds, then you do not need to grease them; if not, then grease the baking molds with margarine. And fill it to 2/3 of the height.

  10. In an oven preheated to 180°C, bake our muffins for 20 – 25 minutes.
  11. We take our desserts out of the oven and decorate with powdered sugar.

Abundantly dust the muffins with powder using a fine-hole strainer. Or melt dark chocolate in a water bath and pour the melted chocolate over the finished muffins with a spoon.
