I am glad to welcome you to my website - we cook with imagination. Recently I came across a recipe - beetroot cookies. My daughters really love carrot cookies, the recipe for which I will post later. I’ve never made cookies from beets before. Valentine's Day is coming very soon, February 14, and these heart-shaped cookies, also in a natural pink color, I mean without dyes, will come in handy. I'm posting the recipe in the category.

I've already baked it twice. It turned out very tasty, the beets are not naturally noticeable, my daughters ate them with great pleasure. The second time I remembered and added vanillin, I think you can also add lemon zest. But it’s so delicious, I’ll bake it again and again.

The consistency is not crispy, but rather soft. Makes 2 trays of cookies. When I baked it for the first time, as stated in the recipe, I grated the beets, the dough was a beautiful pink color, but when the cookies were baked, they changed color, becoming almost normal brown, slightly with a pink tint.

Then the second time I decided to grind the beets with a blender, for homogeneity, and indeed the cookies remained pink after baking. Now you can make these beetroot cookies for Valentine's Day. It will be not only beautiful, but also useful. I wrote about the benefits of beets in the recipe.

It can be offered to children no earlier than two years old, since there is quite a lot of butter. If you want it earlier, from 1.5 years, then replace half the butter with sour cream. To avoid having to add more flour, place the dough in the refrigerator for one hour and only then roll it out on a floured table.

To make beetroot cookies you will need:

2. 200 g butter; (if from 1.5 years 100 g of butter and 100 g of sour cream);

3. 2 small boiled beets;

4. 4 tbsp. l. Sahara;

5. 3 – 3.5 tbsp. flour;

6. 1/3 tsp. soda

7. a little lemon juice (to extinguish soda)

Beetroot cookies recipe

1. Melt the butter and set aside to cool. Beat eggs with sugar.

2. Add melted cooled butter to the eggs and mix.

3. Peel and chop the beets using a blender.

4. Add beets and slaked soda with lemon juice to the egg-oil mixture. Let's mix everything.

5. Add flour and knead the dough.

6. Roll out the dough into a layer. Cut out cookies in the shape of hearts with a cookie cutter.

7. Place the cookies with beets on a baking sheet at a short distance from each other. You don’t have to grease the baking sheet with butter; the cookies won’t stick to it. I cooked on a silicone mat and without it.

8. Bake cookies at 180 degrees for 15 - 20 minutes.

10. For Valentine's Day, you can serve homemade cookies shaped like hearts pierced with arrows, as in the photo. To do this, pierce the cookies with a toothpick at an angle. Then we put pieces of orange or lemon on the ends of the toothpicks. For shine, you can lightly grease the cookies with butter. Bon appetit!

It’s easy to impress guests with a dish of exotic fruits such as avocado or feihua. The overseas name itself is surprising. Try to cook something “kind” from “country” products, for example, from beets.

Salad "oriental bazaar"

The ratio of vegetables in this salad will be approximately this: for 1 large beet you will need 2 eggplants, 2 sweet green peppers, 1 onion and 2-3 cloves of garlic.

Grate the peeled raw beets on a coarse grater and simmer for several minutes in a frying pan with vegetable oil. When it has steamed slightly, add the pepper, cut into small pieces, and simmer for another 5 minutes. Meanwhile, place the eggplants on the rack of a well-heated oven and bake them until the skin is slightly browned and wrinkled. Peel the finished eggplants, chop finely and mix with beets and pepper. Add finely chopped onion and garlic, a tablespoon of vinegar, salt and pepper to the resulting mixture to taste.

Vegetarian borscht

Choose vegetables in the proportions you are used to when cooking meat soup.

Peel 200 grams of champignons, cut into small pieces and place in boiling water. After 15 minutes, add a few sliced ​​potatoes to the broth. Throw in the chopped carrots and onions, after frying them in vegetable oil. And after another 10 minutes, add the beets to the broth. As soon as the soup begins to boil again, add shredded cabbage, salt, and spices to the borscht and cook for another 5 minutes.

Stuffed beets

Let the beets cook and in the meantime prepare the minced meat. Mix chopped stewed beef or lamb with boiled rice and lightly fried onions. Salt and pepper the minced meat.

Cut out the centers of boiled and peeled beets and add minced meat there. Place the stuffed beets in a pan with fat or vegetable oil, pour the broth left over from stewing the meat on top. Simmer everything over low heat for half an hour. When serving, top with sour cream.

Beetroot cookies

Knead the boiled beets into a dough. For 2 beets you will need 300 grams of sour cream, half a teaspoon of vanilla, 3 tablespoons of sugar, a third of a teaspoon of cinnamon, half a teaspoon of soda and 100 grams of flour. Grate the beets and mix them with the rest of the ingredients until you get a homogeneous dough. Put it in the refrigerator for an hour.

Place dessert spoons of the dough on a greased baking sheet so that you get equal portions. And bake in the oven.

  • boiled beets 150 g,
  • premium wheat flour 150 g + for adding,
  • whole grain wheat flour 50 g,
  • thin oat flakes 100 g,
  • eggs 2 pcs,
  • sugar 10 tbsp. spoons,
  • butter 100 g,
  • ground ginger 2 teaspoons,
  • ground cinnamon 1 teaspoon,
  • ground cloves 1/3 teaspoon,
  • ground cardamom 1 teaspoon,
  • baking powder 1 teaspoon,
  • powdered sugar for sprinkling.

If you don't have whole wheat flour, you can replace it with the same amount of oatmeal or plain flour.

Boil the beets, cool and grate on a fine grater or chop in a blender. Canned Bonduelle beets can be used , without liquid.

Mix flour, oatmeal, ginger, cinnamon, cloves, baking powder, cardamom.

Beat slightly softened butter with sugar.


Add eggs and beat again.


Then add chopped beets and combine everything with the bulk ingredients.


Knead the dough. It will turn out soft and sticky. Place the dough in the refrigerator for 1 - 1.5 hours.



The dough will become a little denser, but still sticky and soft. Therefore, divide it into about four parts and work with it in turn, refrigerate the rest. Roll out one part as thin as possible, using flour for sprinkling, and use small molds to make figures.


Bake at 180 degrees for 8 - 10 minutes. Sprinkle the finished cookies with powdered sugar.

At school we collected acorns for various crafts. I also heard that wild boars loved them very much, and from my grandmother’s stories I knew that during the war, thanks to acorns, villagers were saved from hunger. But I never thought that you could cook something delicious with them. Once, out of curiosity, I tried to bite off a nut hidden under the shell and immediately spat it out - it was so bitter.

Last year I went with friends to the forest to pick mushrooms. The wife of one of them picked a basket full of acorns instead of mushrooms. We thought it was for medicinal purposes or crafts. But it turned out that she prepares different dishes with them - from a “coffee” drink to porridge and pastries. When asked how one could eat such bitterness, she replied: “This is the secret - you need to properly prepare the acorns for food, and then they will not only be tasty, but also very healthy!”

There really are a lot of benefits in acorns. They are rich in easily digestible carbohydrates and quickly replenish energy losses. Acorns normalize blood sugar levels. Thanks to tannins, they soothe the stomach and intestines and help with gastritis and colitis. They contain a lot of quercetin, a useful compound for strengthening the immune system and heart function. But in large quantities it is toxic, so you need to get rid of most of it. At the same time, the bitterness will go away.

Peel fresh acorns and cut into quarters. Fill with clean water and soak for 2 days, changing the water three times. On the third day, rinse, add water again and bring to a boil. Drain the water through a colander, and grind the acorns into a mass, which is placed on a baking sheet and dried in a low-heat oven. The result is acorn flour.

You can cook many delicious things with it. I add it to porridge, it gives it a nutty taste. If you fry it a little and pour boiling water over it, you get a tasty drink that tastes like coffee, but does not increase blood pressure. I also make tea cookies with this flour.

It requires 2 cups of wheat flour and 1 cup of acorn flour, 1 cup of sugar, 0.5 sticks of butter, 1 tsp. soda and 1 tsp salt. Beat butter with sugar, mix flour with soda, then mix everything together. Form the dough into balls similar in shape to nuts and place on a greased baking sheet. Bake in the oven for 10 minutes at 180°.

I decorate the top of the cookies with powdered sugar and lemon zest. I highly recommend trying it! In general, you can make any baked goods with acorn flour. By the way, if you brew green coffee and drink it with acorn cookies, then all toxins are removed from the body. It is also good for weight loss.
