After removing the paste from the heat, add 2 drops of almond essence (bitter almonds), mix again and place on a large board, spreading it in a thin layer and covering the surface with cling film. After the marzipan has cooled, it is transferred to a table or work surface, previously sprinkled with powdered sugar, and shaped.

Having given the product the required shape and size (balls, bars, sausages, marzipan figures, etc.), it can be placed in the refrigerator or freezer for storage, having previously been wrapped in cling film. When frozen, the paste can be stored for up to 8 months.

To prepare desserts, the required amount of compressed nut mass is cut off, defrosted at room temperature and used, according to the recipe, for example, for filling buns or preparing shaped products dipped in chocolate or rolled in powdered sugar.

Cooking method

First you need to peel the top skins of the nuts. To do this, pour the almonds into a bowl and pour boiling water over them for 20 minutes. Set aside and let cool.


Check if the skin comes off easily. In principle, lightly pressing the nut with your fingers is enough for the skin to come off in flakes. If the nuts are very dry, pour boiling water over them again and let stand for another 10 minutes, checking periodically. Peel all nuts and rinse under running water. Dry.


To enhance the taste of the nut, you can heat it in the oven for 10 minutes. Cool. Pour the peeled nuts into a blender and grind until smooth at maximum speed. This can take from a couple to ten minutes depending on the power of the blender or chopper.


If you don't have enough almonds, replace some of them with other nuts. But remember, in order not to completely distort the taste or spoil the plasticity of the mass, there should be at least one third of almond nuts in the total mass.

If there is no blender, the kernels can be passed through a fine mesh grinder several times. Some housewives use a coffee grinder for grinding.


Add almond essence, egg, yolk, lemon juice and fine sugar to the ground nuts.


Beat the mixture with a mixer until smooth, at least 5 minutes. Form a brick out of marzipan, wrap in cling film and place in the refrigerator or cool place for 2 hours. Your homemade marzipan is ready!


If the mass turns out to be liquid or too soft, add a little powdered sugar to it, and if it is dry or hard, add beaten egg white.

It is best to store this marzipan in cling film or in a plastic container in the refrigerator. Shelf life – no more than 1 month. But the surest way is to prepare fresh immediately before use, since this quantity of ingredients yields the amount of marzipan necessary to prepare one stollen, a portion of sweets or a coating for one cake.

Note to the hostess

  1. This recipe includes raw eggs. It is better to take the freshest eggs from a trusted manufacturer. If you are afraid to use raw eggs without processing, you can omit them by replacing them with 1-2 tbsp. boiled water. This marzipan can already be considered lean.

DIY chocolate marzipan

Ingredients:

  • sugar – 150 g
  • water – 40g (or water with cognac 50/50)
  • cocoa powder – 1 tbsp. l.

Preparation

  1. Pour boiling water over the nuts, peel the husks, then dry in the oven for 5 minutes. at a temperature of +60 degrees. Alternatively, you can lightly fry the grains in a dry, ungreased, thick-bottomed frying pan.
  2. Grind the kernels with a blender/coffee grinder until they become flour.
  3. Pour water over sugar, place in a thick-bottomed bowl, and place on fire. Heat until sugar dissolves and syrup forms.
  4. Add almond flour to the syrup and heat, stirring for 4 minutes. Add cocoa powder; if desired, you can add almond essence. Mix.
  5. Let the finished mixture cool, then pass it through a fine mesh meat grinder. Place the almond mass on a board sprinkled with fructose (powdered sugar) and roll out with a rolling pin. The material turned out to be very plastic, convenient for work.

Creamy marzipan with flour

Ingredients:

  • chilled cow's milk cream, 20% fat - ½ cup
  • wheat flour – ½ cup
  • almond kernels – 100 g
  • powdered sugar – 250 g.

Preparation

  1. Mix the sifted flour with the cream until smooth. Heat the mixture in a bowl over a water bath until thickened. Cool the mixture.
  2. Peel the almonds by first soaking them in boiling water, dry them in the oven and grind them to the consistency of flour.
  3. Add almond flour and powdered sugar to the cooled creamy flour mixture and mix everything thoroughly. If necessary, add dyes and flavors.
  4. The finished “dough” rolls out perfectly into a thin layer, suitable for modeling products of various shapes, which should then be slightly dried.

Calorie content, benefits and harm

Marzipan – quite a high-calorie product due to the high content of carbohydrates (sugar) in the composition. Almond kernels are also rich in equally high-calorie vegetable fats. The energy value is 480 Kcal/100 g. Therefore, its excessive consumption is contraindicated for obese people. The product is also harmful to those diagnosed with diabetes. Allergy sufferers should use this treat with caution.
