Fish casserole, like in kindergarten, is quite easy to prepare. It is better to take sea fish (it has fewer small bones and more phosphorus and healthy fats). If you managed to take not a fillet, but a carcass, don’t be upset.


  1. We free the fish from bones and skin (if it’s a fillet, then we move on to the next step automatically).
  2. Place the fillet in a saucepan in cold, lightly salted water, let it boil, and cook over low heat for no more than 5 minutes.
  3. Remove the fillet from the pan, cool and mash with a fork until mushy.
  4. Pour flour into a heated dry frying pan and dry it until golden brown. Pour the previously melted butter into the flour and mix thoroughly to avoid lumps.
  5. Bring the milk to a boil in a separate bowl and add a mixture of flour and butter. Stir and add salt and pepper. Remove the sauce from the heat and let it cool slightly.
  6. Grease a baking dish (not very large, but preferably several small ones) with vegetable oil. Place half of the minced fish on the bottom of the pan and pour the sauce over it. Then another layer of fish. Top everything with the remaining sauce.
  7. Beat the eggs with a whisk, pour over the future casserole, and sprinkle the whole mass well with breadcrumbs.
  8. Place in the oven, preheated to 180. Bake for 20-25 minutes until golden brown. We take out the finished product, cool it and feed the baby (and you will also get some).

Variation with rice

Fish casserole with rice (like in kindergarten), as one of the options, has a right to exist. It must be said that rice in some Soviet kindergartens was added by cooks solely in order to save fish: if you put half the mass in a dish as rice, then exactly half as much fish will be wasted! Vegetables are pre-fried, salted and seasoned with spices. Before forming the casserole, prepare a filling based on sour cream, cream, and the addition of beaten eggs.   • fillet of your favorite fish – 650 g;
  • good oil - 0.5 packs;
  • wheat flour – 35 g;
  • milk – 1 glass;
  • grated cheese - about 5 tbsp. l.;
  • whites with yolks - 3-5 pcs.;
  • breadcrumbs - 2 tbsp. l.;
  • ground nutmeg – 0.5 tsp;
  • black pepper, salt.

Melt the butter in a frying pan, add flour and the required amount of milk. Cook the mixture until it thickens, then cool at room temperature. Gradually stirring, you need to add the yolks, minced fish and grated cheese into the boiled mixture. Spices and salt are sent next. Separately, beat the yolks until stiff peaks form and then gradually add them to the rest of the products.

You can bake the casserole in a large springform pan or small pans. For baking fish, it is better to choose small portion forms - the food in them will turn out not only tasty, but also beautifully decorated. The bottom and sides of the containers are greased with oil and sprinkled with breadcrumbs, the prepared mass is laid out and sent to the oven, heated to 220 degrees for 35 minutes. “Cake like in kindergarten” at home

The fish soufflé in the oven will be prepared using bechamel sauce, so let’s prepare it first. Melt pieces of butter at room temperature in a hot, dry frying pan.

Add flour.

Immediately mix the flour and butter until you get a flour paste.

Pour in the milk. Stir the sauce until smooth. Boil it for 5 minutes.

Remove from heat and let cool. To cool faster, you can pour it into a bowl. Prepare minced fish. To prepare fish soufflé at home, you can use either ready-made store-bought minced meat or one made from a whole fish carcass or fillet. Peel the onion and cut it into cubes.

Separate the whites from the yolks. Place the bowl of whites in the refrigerator to cool. When chilled, egg whites whip better. Add onion, fish fillets and egg yolks to the bowl with bechamel sauce.

Using an immersion blender, blend all ingredients.

Using a mixer, beat the egg whites with a pinch of salt at high speed. After whipping, they should turn into a thick fluffy foam.

Now add starch to the bowl with the fish soufflé base. Both corn and potato starch will work. Like eggs, it will give the soufflé the necessary density.

Bake the fish soufflé in the oven for 30 minutes on the middle shelf. During baking, it should rise approximately twice and be covered with a golden crust. When removed from the oven, the soufflé will collapse, which is normal. The finished fish soufflé, like the casserole, can be tasted hot or cooled.

  • cod fillet - 400 g,
  • one egg,
  • carrots - 1 pc.,
  • 70 ml milk,
  • flour - 1 tbsp,
  • butter - 20 g,
  • salt - a pinch.

  1. Clean the fish from bones and cut into small pieces.
  2. The fillet needs to be boiled. Pour some water into the pan and when it boils, add the fillet pieces.
  3. Peel the carrots and grate them on a coarse grater. Spread it in a thin layer on top of the fish and simmer for 10-15 minutes without stirring.
  4. While the food is stewing, wash the egg and separate the white from the yolk.
  5. Remove the fillet and carrots from the pan and puree in a blender. You can use a meat grinder.
  6. Mix minced fish and yolk.
  7. In a separate container, beat the egg whites into stiff foam.
  8. Now we prepare the filling for the minced meat. Pour milk into a shallow pan, add flour to it and cook, stirring constantly. When the lumps disappear, add the butter and remove from the heat.
  9. Mix the minced fish with the filling and add salt. You should get a homogeneous mixture.
  10. Now it's the turn of the proteins. Carefully add them to the rest of the ingredients and mix.
  11. Prepare a mold with fairly high sides, grease it with butter or vegetable oil, or cover it with foil.
  12. Bake in the oven for about half an hour until the casserole has a golden crust around the edges. Oven temperature - 200 degrees.
  13. Wait for the casserole to cool slightly. It is easy to cut into portions. Serve with vegetable salad or on its own.
